The concept
The format is built for groups and for time at the table: full service, a long dwell, and a reason for a party of six to stay rather than turn. That shapes what a good site looks like, which is why the criteria we publish for brokers are written around this restaurant rather than a generic footprint.
For a landlord the useful part is that one group of people underwrites the deal, signs the lease, manages the buildout and then runs the restaurant. Our recent buildouts have been funded with our own equity, so no lender sat between a signed LOI and an opening date, and there is no franchisee between the lease and the staff on the floor.
